Hot Steak Taco with Slaw

Makes 4 Servings

Ingredients

1          1-pound skirt steak

1          Packet(1.25 ounce) hot taco seasoning

4          Burrito-size flour tortillas, Mission

11/2    Cups shredded low-fat Mexican cheese blend

1          Cup tequila-lime salsa, Newmans Own

             Deli Coleslaw

1          Lime, cut into wedges

Cooking Instructions

1)        Preheat broiler. Line a baking sheet or broiler pan with aluminum foil. Coat steak with taco seasoning; place on prepared baking sheet. Broil 6-8 inches from heat for 3-4 minutes per side for medium doneness (160F). Transfer to cutting board; let rest for 10 minutes. Slice steak across the grain, then chop into bite size pieces.

2)        Wrap tortillas in a damp paper towel. Microwave on high for 30-45 seconds or until warm. Sprinkle cheese evenly in centers of tortillas; add 1/4 cup salsa and one-fourth of the chopped steak to each. Top with desired am mount of coleslaw. Garnish with lime wedges.
