Caramelized Onion-Scallion Dip

Caramelized Onions

 

2 Tbsp              Unsalted butter

3 cups              Sweet onion, chopped (about 2 medium onions)

1 tsp                 Kosher salt

¼ tsp                Black pepper

 

In a medium saute pan over medium heat, add butter, melt, then add onions, stirring and coating all the pieces with butter.  Stir onions often, but cook slowly till they turn a nice amber brown.  Do not burn the onions, especially in the beginning of the cooking process.  Caramelized onions will take approximately 1 hour to cook, so stir of often.  Once the onions are nice and dark brown, you can let them caramelize and get a dark golden color, but do not allow them to burn.  Remove from pan, and set aside to cool.  If there is excess butter, use a paper towel and absorb off the butter.

 

Caramelized Scallions

 

1 ½ Tbsp          Unsalted butter

2 bunches         Scallions (green onions) chopped, green part only

¼ tsp                Kosher salt

Dash                White pepper

 

In a small saute pan of medium heat, add butter, melt and add green onions.  Stirring constantly, cook for about 15-20 minutes allowing the scallions to first soften, then slowly caramelize and get crispy.  Remove from pan and allow to cool.

 

Dip

 

8 oz                  Sour cream

                        Caramelized onions

                        Caramelized scallions

¾ tsp                Kosher salt       

Dash                White pepper

 

In a small mixing bowl, add sour cream, onions, scallions, salt and white pepper.  Combine well.  Preparing a day ahead will allow the flavor to really develop, but you can serve right away too. 

 

Serve with pita chips
